Recipe: Easy Corn Salsa

Easy Corn Salsa

Serves 4                                                                                                          

Ingredients

2 cups of cooked corn, removed from cob

1 small onion chopped (about ½ cup)

1 cup cilantro shredded or minced

3 medium jalapenos chopped (to taste)

4 limes

pinch of salt and pepper


Directions

  1. Combine corn, onion, cilantro, and jalapenos.

  2. Squeeze the juice of the limes on the mixture.

  3. Add pinch salt and pepper


Notes: For spicier version, add additional jalapenos.  The more seeds you leave in the jalapeno, the hotter the salsa.  To make a milder version, remove more seeds. Another option, add 1 avocado chopped

*Serve with chips OR celery for a low carb crunch
