Baked Chicken, Ham, & Swiss Rolls

Makes 4 servings

Ingredients:

4 small skinless, boneless chicken breast halves (1 pound)

Dijon mustard

4 slices deli ham

4 slices of Swiss cheese

1 tbsp butter, melted

¼ cup fresh breadcrumbs

 Instructions:

  1. Preheat oven to 350 degrees.

  2. Place each chicken breast b/t two pieces of plastic wrap, working them from center to the edges, lightly pound with a flat side of a meat mallet or the bottom of a small heavy skillet to a uniform 1/4” thickness.

  3. Remove plastic wrap.

  4. Place one slice of ham and one slice of cheese on each chicken piece then smear with mustard.

  5. Fold in the sides and roll up jelly-roll style, securing both ends with toothpicks.

  6. Arrange chicken rolls in a shallow baking dish. Brush with melted butter and sprinkle with bread crumbs. 

  7. Bake for 25-30 minutes, until chicken rolls are cooked through.

  8. Cut eat roll into 1/2” thick slices and fan out on individual plates.
